"Free Range" Mesquite on the Texas prairie
Mesquite (mis-keet') -- prosopsis glandulosa var.gladulosa
Also known as Honey Mesquite and Algaroba, it is a native
tree to Texas, with at least one of its three sub-species common to
every county in the Lone Star State. Highly prized as a "bee tree,"
its long fragrant blossoms give way to sweetish, 4 to 5-inch
beans which were used widely as food by Native Americans
and which today are consumed by livestock and foraging wildlife.
The wood of the mesquite burns with a white-hot heat, leaving little ash,
and imparts a unique smoky flavor to grilled food.
THE MYTH OF MESQUITE
Lots of folks believe that to get the unique smoky flavor of mesquite that the best way
is to cook directly over the wood -- a technique which often results in uneven cooking,
not to mention longer cooking times and the use of a prodigious amount of precious wood.
Our experience here at Down Home Texas Mesquite has been that the best flavor and
the most even cooking results from a combination of charcoal and chips or cakes of mesquite.
Another myth is that mesquite can't be used with a propane grill -- nonsense!
Simply wrap soaked chips or cakes in aluminum foil, poke a few holes in it and
place it directly on your grill pan --
the wood will heat up, smoke will escape the poke-holes and there you have
that down-home smoky flavor without waste or mess!
